The process of the invention allows pomegranate seeds to be preserved in the fresh state, in "ready-to-eat" form, which is an interesting alternative to the direct consumption of the fruit owing to the difficulty involved in peeling it. The process, which includes preparation of the bagged fresh seeds and preservation thereof, preserves the original quality of the pomegranate seed once separated from the rest of the fruit.
