PROBLEM TO BE SOLVED: To provide a gel for food mixable with ice cream and yoghourt and usable as a jelly or sweetening agent, etc., and its production. SOLUTION: This gel for food is obtained by formulating a lowly methoxylated pectin, an inorganic salt, a calcium salt, sugar, fruit juice and water or additional water then gelatinizing at 4-9pH. Water and fruit juice are mixed and a lowly methoxylated pectin, an inorganic salt, a calcium salt are added then the mixture is heated, sorbitol, maltose or isomalto- origosaccharide are added and dissolved under boiling. Diluting water is added and mixed then the mixture is cooled to produce gel for food. |
