PROBLEM TO BE SOLVED: To provide a method for producing a soybean extract, capable of easily and massively producing the soybean extract little in irritation to skins and having a trypsin activity-inhibiting action due to SbI. SOLUTION: This method for producing the soybean extract comprises grinding soybeans swollen by the absorption of water and subsequently subjecting the ground product to a heating extraction treatment using an aqueous medium. Therein, the heating extraction treatment is carried out in an aqueous extraction solvent having a pH of 1.0-12.0 at a temperature not inactivating a trypsin- inhibiting action-having protein contained in the soybean extract. If desired, a thermal sterilizing treatment after the heating extraction treatment is carried out at a temperature inactivating the trypsin-inhibiting action-having protein contained in the soybean extract and substantially sterilizing the soybean extract, after the pH of the soybean extract is controlled to either of 1.0-2.0 and 11.0-12.0. |
