PROBLEM TO BE SOLVED: To produce a seaweed food material having a dark color similar to natural seaweed as well as excellent taste and flavor and useful for health food, etc., by bringing a seaweed containing chlorophyll, etc., into contact with an aqueous solution of ethanol under specific condition and separating the seaweed from the ethanol solution. SOLUTION: The objective seaweed food material can be produced by bringing a seaweed containing chlorophyll and fucoxanthine such as Laminaria japonica or Undaria pinnatifida into contact with an aqueous solution of ethanol having a concentration of 55-70% at 0-50 deg.C and separating the seaweed from the aqueous ethanol solution. The produced seaweed food material exhibits crisp feeling free from slimy feeling of seaweed and is useful as an ingredient for an instant soup, instant noodle, etc. |
