摘要 PROBLEM TO BE SOLVED: To obtain a food using powder of leaf and stem of buckwheat, excellent in nutrition and having useful pharmacological action and provide a method for producing the food. SOLUTION: This food is produced according to the following steps. Soybean is immersed into water for 3-6hr in summer season or for 22-24hr in winter season (S101). The soybean immersed into water is ground by a grinder such as hand mill (S102). Powdered soybean is boiled in hot water heated to 98-100 deg.C for 1min (S103). Boiled soybean is squeezed by pressing to extract soybean milk (S104). The extracted soybean milk is mixed with powder of leaf and stem of buckwheat and a proper amount of a solidifying agent is added to the extracted soybean milk to coagulate the soybean milk (S105). The coagulated soybean milk is pulverized and put into a mold which is a container having a hole part for draining and having a prescribed shape, and pressed to drain the soybean milk (S106). The drained coagulated soybean milk is cut into a prescribed size (S107).
