<p>A thermostable proteolytic enzyme which is producible by Thermoactinomyces thalpophilus THM1 (NCIMB 40778) and which: (a) has a pH optimum of about 8; (b) has a temperature optimum of about 70 °C; (c) is substantially inhibited by 1 mM phenylmethylsulphonylfluoride but substantially not inhibited by 10 mM dimethylsulphoxide, dithiothreitol or β-mercaptoethanol; (d) is at least partially dependent on the presence of calcium for its thermostability; and (e) is thermostable at 50 °C for at least 6 hours without substantial loss of activity, is useful in the preparation of protein hydrolysates for nutritional and clinical use.</p> |
