To stimulate the crystallization of M-aspartame, aspartame chlorinate neutral solution is quenched in decompressed state of at least 730mmHg. In sealed crystallizing tube, which equips air pressure line, vacuum line and spray-type neutral solution charger, solution whose concentration of aspartame is 4.5 to 5.5 weight % is passed, thereafter, said solution is sprayed, decompressed to at least 730mmHg. Then, crystallized M-aspartame is transferred to controlling tube.
