O/W emulsions, especially O/W microemulsions, or O/W/O emulsions or O/W/O' emulsions comprise: (A) an aqueous phase, optionally containing water-soluble or water-dispersible substances; (B) an oil phase, optionally containing oil-soluble or oil-dispersible substances, especially W/O emulsifiers; and (C) an emulsifier (I): (i) whose lipophilicity increases or decreases with increasing or decreasing pH; and/or (ii) whose lipophilicity increases with increasing temperature; and (iii) whose hydrophilicity increases with decreasing temperature.
