SOLUTION: A fish flesh of raw material, such as bonito flesh, is cooked by a conventional method, boiled, dried and seasoned with a seasoning liquid such as a sea tangle soup stock or sea tangle extract, until the drying process is finished. The fish flesh seasoned in a state reduced in smoke components by the use of a dehumidifying drier, etc., is dried to give the dry fish.
