PROBLEM TO BE SOLVED: To provide a process for the preparation of a fried food for heating with a microwave oven after preservation in frozen or refrigerated state and capable of keeping the crispness of the coating over a long period after heating with a microwave oven and maintaining the juicy property of the ingredient. SOLUTION: A fried food for cooking is prepared by applying a water-soluble polymeric substance to the surface of an ingredient, applying a batter liquid and optionally further bread crumb to the ingredient, frying the coated ingredient and preserving in frozen or refrigerated state. The water-soluble polymeric substance is preferably hemicellulose, gum, polysaccharide produced by microorganism, gelatinized starch or their partial decomposition products, especially preferably a hemicellulose partially decomposed to get a viscosity of 5-20cps measured by a Brookfield viscometer in the form of 5wt.% aqueous solution at 25 deg.C. The application of the water-soluble polymeric substance to the ingredient surface is preferably carried out by dipping the ingredient in an aqueous solution of the water-soluble polymeric substance or dusting the surface with the powder of the substance. |
