PROBLEM TO BE SOLVED: To obtain a flavor imparting base material having a heated cereal or a biscuit-like flavor and useful for a food production by liquefying a mixture containing a starchy material, etc., with a carbohydrate decomposing enzyme, and then enzyme-treating with a lipase, etc. SOLUTION: This flavor imparting base material is obtained by preparing a mixture containing preferably 50-70% water, preferably 25-50% starting material of a starchy material, and preferably 0-5% vegetable oil, liquefying the mixture by preferably 0.2-0.5% one or more carbohydrate decomposing enzyme such as an α-amylase, etc., at 50-85 deg.C for 70-90min, and then enzyme-treating the mixture with preferably 0.05-0.2% lipase or preferably 0.5-1.5% lipoxygenase. |
