FIELD: food-processing industry. SUBSTANCE: apparatus has housing, cellular knife adapted for cutting product into pieces and inserted into slots in opposite sides of housing, table adapted to level predetermined portion of cut part of product and inserted into slots perpendicular to slots of cellular knife and cutter adapted to cut away peel and mounted in casing with cutting edge adjoining to working surface of cellular knife. Working surfaces of cellular knife and table are faced one toward another. Cell walls of cellular knife are positioned perpendicular to direction of movement of knife. Cutter is positioned laterally of table on cellular knife movement path, with cutting edge of cutter being oriented to table. EFFECT: increased efficiency, wider operational capabilities and improved quality of peeled product. |
