PROBLEM TO BE SOLVED: To produce Agraricus blazei mushroom in high yield and easily controllable state by using a mycelium bed produced from a medium fermented under specific condition, thereby stabilizing the medium and increasing the resistance to pathogenic microorganisms. SOLUTION: Mycelium of Agaricus blazei mushroom is inoculated to a medium preparatorily fermented at 55-65 deg.C and a water-content of 60-75wt.% for 7-20 days. After growing the mycelium, the microbial bed is covered with soil to induce the development of fruit body. Preferably, a thoroughly mixed medium component having a water content adjusted to 60-75% is preparatorily fermented for 7-20 days while turning the medium at intervals of 4 days, the medium is transferred to a main fermentation chamber and fermented at 60 deg.C for 1 day after transfer and then at 50±3 deg.C for 2-7 days. The pH of the medium is preferably adjusted to 6.5-7 and the water-content of the fermented medium is preferably 65%. A material containing rice straw is suitable as the medium raw material. Actinomycete or bacteria beneficial to the mushroom is preferably added to the medium at the 1st turning operation in the preparatory fermentation.
