PROBLEM TO BE SOLVED: To obtain an extract containing functional nutrient ingredients, capable of preventing putrefaction during fermentation and useful for production, etc., of candy cake in good productivity by adding a protein raw material, etc., to boiled grains in which Aspergillus oryzae is grown and adding a pH lowering agent, etc., thereto and treating the mixture under specific conditions. SOLUTION: One kind of a protein raw material selected from water, beans, fishes and shellfishes is added to boiled grains in which Aspergillus oryzae is grown and a pH lowering agent such as citrus fruits and/or an alcohol is added thereto and the mixture is kept at 30-55 deg.C for 1-20 day and filtered and the resultant filtrate is concentrated to provide the objective extract containing functional nutrient ingredients. Furthermore, candy cake is preferably produced by adding saccharides, etc., to the concentrate and boiling the mixture down in an extruder 2 or a cooker. |
