PROBLEM TO BE SOLVED: To provide storage rice preservable for the long period of time to be tasteful rice by re-heating after adding water by repeating a humidification operation in the process of heating the rice with steam, making the moisture of the rice a specified wt.% in the process of gelatinizing rice starch and then rapidly performing cooling to a normal temperature. SOLUTION: In the manufacture device 1 of this storage rice, the rice before washing is measured in a rice measurement part 3 and fed into a container 2 in a steaming basket shape and then, the rice is washed by spraying air and the steam. Then, in a rice humidifying and steaming part 5, the humidification operation for supplying the water of 0-100 deg.C is repeated at least more than two times in the process of supplying the steam and steaming the rice inside the container 2. Also, in the process of gelatinizing the rice starch, the moisture of the rice is made to be 20-40wt.% at maximum. Then, in a vacuum cooling and wrapping part, the humidified and steamed rice inside the container 2 is received in a bag 6, vacuum cooled while it is kept opened, rapidly turned to the normal temperature and turned to an atmosphere pressure and the bag 6 is tightly sealed. The humidified and steamed rice packed in the bag is left in an aging yard for at least more than 24 hours and the gelatinized rice starch is aged. |
