PROBLEM TO BE SOLVED: To provide a process for the preparation of bread crumb enabling continuous and quick preparation of bread crumb from a sheet dough using yeast and capable of freely controlling the dough texture. SOLUTION: This bread crumb production process is provided with a continuous dough supplying step A to continuously supply bread dough, a sheeting step B to roll and expand the continuously supplied bread dough to obtain a sheet, an aging step C to effect continuous aging of the sheet-formed bread dough in an oven, a dough texture forming step D to extend the aged bread dough to form a prescribed dough texture, a dough texture fixing step E to fix the dough texture by heating the bread dough having the dough texture with microwave and a crushing step G to crush the bread having fixed dough texture to form a bread crumb powder. |
