To produce alk. medium in alk. enzymatic hydrolysis of proteins waste of animal origin, from 0.5 to 3.0 percent of at least one oxide or hydroxide of alk. metals or earth in combination with from 1 to 8 percent of amine, or the mixtures thereof, at a boiling temperature up to 200 DEG C at atmospheric pressure are added prior to dosing enzymes into the waste in water. The hydrolyzate thus obtained contains a protein component comprising in particular a peptide mixture and an admixture, in particular a low-molecule salt. The admixtures content in said hydrolyzate, the content being expressed as the weight part of flue, does not exceed 6 percent of the total weight of the hydrolyzate dry matter. The hydrolyzate is usable in particular as adhesive and gelatine for the manufacture of glues, for the preparation of flocculation agents and as an additive in the food-processing industry, and the like.
