A novel crystalline maltitol composition having an essentially porous cellular structure, a high maltitol purity and a low density, is disclosed. Said composition has remarkable functional properties whereby it is particularly suitable for making tablets or various water-soluble powders. A novel method for making the crystalline maltitol composition is also disclosed.
