PROBLEM TO BE SOLVED: To obtain a powdery food capable of being used for many purposes, good in taste and excellent in nutritive value by using citrus young fruits not having been used as a raw material. SOLUTION: This method for producing the food comprises wholly cutting the young fruits of a citrus such as Citrus junos Tanaka, Citrus sphaerocarpa or lemon, gradually heating the obtained wet chips comprising the fruit flesh, the inner bags, the seeds and the juice from the starting temperature of ordinary temperature to the final temperature of 60-70 deg.C to strengthen and concentrate the taste of the wet chips by the actions of enzymes contained in the wet chips and simultaneously dry the wet chips, and subsequently pulverizing the dried product. |
