PROBLEM TO BE SOLVED: To obtain the subject egg containing mucopolysaccharides comprising chitin and/or chitosan in edible parts comprising the yolk and the albumen and suitable as an effective intake source having a biophylactic function, a self activation function, etc. SOLUTION: Edible parts comprising yolk and albumen in egg contains mucopolysaccharides comprising chitin and/or chitosan preferably in an amount of 100-450mg per 100g of the edible parts. In order to produce the objective egg with a poultry, the chitin and/or the chitosan are preferably continuously orally administered into the laying poultry in an amount of 3-10g/kg of the body weight of the poultry a day. Thereby, the objective eggs can stably be produced, and the useless excessive administration of the chitin and/or the chitosan can be prevented. The chitin and/or the chitosan can be administered in a state such as the ground shells of a crustacean such as shrimp or crab. |
