Process for the preparation and preservation of a natural food supplement based on the crustacean Antarctic Euphasia superba, applicable for human consumption, which is obtained from krill or flesh (2) separated from the shell and eyes of the crustacean (1) by mechanical means in the specialized boat, being subsequently subjected to a freezing stage from which the measurement of the fluorine contained is effected, the flesh then being subjected to a thawing stage, antiproteases being added, followed by treatment in a mincer (9), a semi-paste (10) being obtained, which is incorporated into a homogenizer (11) where antioxidants are added, followed by passage through a strainer (17) and then drying (18) with a spray- drier (19), freeze-drier (20) or air stream (19'), with final treatment in a grinder (21) from which the product will emerge in powder form, constituting the Antarctic Euphasia superba product (22). <IMAGE> |
