摘要 A process and installation are claimed for the production of pasta from a mixture of dry (12) and wet (13) ingredients. The ingredients are fist dosed (19) into the production installation and centrifuged at high speed (22) for 1-10 seconds in a centrifuge with a rotating axial arm (24) carrying a number of radial projections (25) arranged in a spiral leading downwards inside a vertical sleeve (23). The length of the centrifuge depends on the throughput required. The ingredients are then quickly mixed (27) for 10-30 seconds followed by a rest of 60-120 seconds in a buffer vessel (30) before extrusion (17). The process takes place under vacuum.
