<p>Apparatus for the removal of meat from a part (L) of a carcass of a slaughtered animal. The apparatus has a mounting surface (12) against which the carcass part (L) is clampingly engaged by srew elements (19). A knife (26) is operable to separate meat from the spinous process of the carcass part (L). Following this cut a plurality of knives (39) are brought into cutting engagement with the carcass part (L) to separate meat from the knuckles and upper part of the ribs of the carcass part (L). A reciprocating knife (57) is then engageable with the carcass part to separate meat from the remainder of the ribs. The cutting operation by the reciprocating knife includes relative movement between the knife and the support surface (12) so as to cause relative movement to occur between the carcass part (L) and the knife (57) so that a substantially constant relationship of the attitude of the knife relative to the ribs is maintained.</p> |
