<p>The present invention provides a method of increasing the performance of yeast, the method comprising exposing the yeast to at least one compatible solute/osmoprotectant for a period of time sufficient to result in an intracellular concentration of the at least one compatible solute/osmoprotectant of at least 70νMoles/gram dry yeast. It is preferred that the exposure is for a period of time sufficient to result in an intracellular concentration of the at least one compatible solute/osmoprotectant of at least 100νMoles/gram dry yeast.
