Hard, crystalline coating containing ≥ 90% of a mixture of polyols comprises (as dry matter) 20-50% mannitol or 5-50% glucose 1-6 mannitol, the rest of the dry matter being xylitol, maltitol or lactitol. Also claimed is the use of mannitol or glucose 1-6 mannitol to improve the rate of formation of a hard coating using xylitol, maltitol and/or lactitol.
