PROBLEM TO BE SOLVED: To provide a method for producing cooked noodles without sticking the noodles, deteriorating the taste of an ingredient and losing the shape thereof by housing the noodles in a boiled state together with a previously cooked ingredient in a container or a bag and carrying out the thermal sterilization. SOLUTION: Gelatin at 2-10% weight ratio based on noodles and salt at 4-5% weight ratio based on the noodles are added to water in amount of about 10 times based on the weight of the noodles and the resultant mixture is boiled to boil the noodles for a prescribed time. The boiled noodles after the boiling are then washed with water and smeared with SHIRASHIMEYU (a refined rape oil) at 4-6% weight ratio based on the boiled noodles. The noodles and a previously cooked ingredient are then placed in a gas barrier and heat- resistant bag. Air in the bag is replaced with an inert gas to hermetically seal the bag mouth. The hermetically sealed bag is placed in a sterilizing bath and overheated high-temperature water is jetted into the sterilizing bath to raise the temperature in the sterilizing bath to 80-100 deg.C within 5-15min. Thereby, the temperature of the noodles is stepwise increased in the order of 100-105 deg.C for 5-6min, 108-110 deg.C for 25-30min and 113-115 deg.C for 8-10min to carry out the sterilizing treatment. |
