A process for the pickling and refining of meat is new. The novelty is that pickling agents are introduced into the meat under time-variable pressure with a simultaneous temperature rise from the outside. Also claimed is a device for carrying out the process which consists in a heatable autoclave. Preferably the temporal change in pressure is periodic and the frequency of the period lies in the acoustic range. Nitrogen monoxide is used as pickling agent.
