PROBLEM TO BE SOLVED: To obtain a new alkali protease having high activity not only against soluble proteins but also against insoluble proteins such as keratin. SOLUTION: This new alkali protease has the following physicochemical characteristics; (a) action and substrate specificity: acting on various proteins such as casein, gelatin, gluten, hemoglobin and insulin to produce oligopeptides and amino acids by endo-type-hydrolyzing the peptide linkages; in particular, highly hydrolyzing even insoluble proteins such as keratin on which conventional enzymes have been hard to act.; (b) optimum pH: 11.0-11.5 in the case of casein as substrate; and (c) specific activity: 214,000 (U/mg protein) for casein, and 52,700 (U/mg protein) for keratin. |
