PROBLEM TO BE SOLVED: To provide a method for producing a fish meat kneaded product such as Kamaboko (fish paste), capable of rapidly producing and having high gelling force without causing the lowering in quality of ground fish meat, etc. SOLUTION: In this method for producing a fish meat kneaded product, containing a step for adding common salt to ground fish meat and stirring and mixing the fish meat and a step for forming and heating the stirred and mixed ground fish meat, the finishing temperature in grinding of stirred and mixed ground fish meat is kept to <=10 deg.C in the stirring and mixing step and formed ground fish meat is heated by utilizing electric resistance of the interior of ground fish meat by energizing the formed ground fish meat in the heating step. |
