PROBLEM TO BE SOLVED: To obtain the subject composition substantially not browned during storage, even when the purity of the phospholipid is not very high, by specifying the ratio of the content of glucose to the content of the phospholipid. SOLUTION: This yolk phospholipid composition has a phospholipid content of <=80%. Therein, the ratio of the weight of contained glucose to the weight of the contained phospholipid is <=0.1, preferably 0.01-0.1. The phospholipid content of the objective composition is preferably >=20%. When a more suitable yolk phospholipid composition than the above-described composition is required as a health-assisting food, the content ratio of cholesterol to the weight of the contained phospholipid is preferably <=1%. The objective composition is obtained e.g. by treating a yolk liquid with glucose oxidase to remove glucose, drying the treated product by a spray drying method, etc., extracting the dried egg with alcohol, and, if necessary, further treating the obtained phospholipid composition having a phospholipid purity of 20-60% with acetone to enhance the purity of the phospholipid. |
