摘要 A process for producing bread comprising placing the frozen dough on a conductive tray in a container and applying an alternating potential to the dough using a high voltage generator which is connected to the tray and to the conductive inner wall of the container through a terminal. A container for thawing, maturing and fermenting dough is also disclosed. The container includes an internal conductive wall, trays for dough which are of a conductive material and a terminal on the internal wall for receiving a high negative potential. The container is covered by an insulating external wall.
