PROBLEM TO BE SOLVED: To obtain a natural animal gut modified by immersing in an aqueous solution of transglutaminase, effective for suppressing the breakage, capable of improving the palatability of e.g. a sausage prepared by using the gut as a casing and useful for improving the operability in the preparation of sausage, etc. SOLUTION: A natural gut of an animal such as sheep is modified by immersing in an aqueous solution of transglutaminase (having a concentration of preferably 0.1-1.0unit/mL) at a low temperature (2-15 deg.C). The modified natural animal gut is preferably used as a casing for the preparation of sausage. |
