<p>A method of making an alcoholic beverage by fermentation, in which a source of assimilable nitrogen is added to the fermenting liquor (12) to supplement the assimilable nitrogen content of the liquor, comprises monitoring the gas evolving from the fermenting liquor for the presence of H2S by making use of indicator strips (18) which are selectively responsive to the presence of H2S. A source of assimilable nitrogen is added to the liquor in response to the detection of H2S in the gas. This is done on a periodic basis throughout the fermentation process. A fermentation test kit for use in the method is also disclosed.</p> |
