Novel amphiphilic complexes, a method for preparing same and compositions containing such complexes, are disclosed. Said amphiphilic complexes are produced by reacting one or more proteins having an average molecular weight of at least 5000 Daltons with one or more C4-30 fatty chains selected from fatty acids, fatty alcohols, fatty amines and derivatives thereof except for undecylenic acid, at a temperature between room temperature and 80 DEG C, the weight ratio of the reagents [protein(s):fatty chain(s)] being from 1/1 to 1/10, advantageously 1/3 to 1/5.
