PROBLEM TO BE SOLVED: To ensure the affluent 'juice' and the 'deliciousness' owing thereto inherent in oyster just after harvested to be retained. SOLUTION: This preservation method for raw oyster comprises preserving shell oyster by refrigerating or freezing it while being left intact. Specifically, in refrigerating or freezing, the shell raw oyster is restrained in advance so as not to open a pair of the shells to ensure the juice therein not to leak outside. |
