PROBLEM TO BE SOLVED: To stably obtain a fish paste having high quality because of always usable of a fish paste having a specific quality by preserving frozen crushed materials of frozen ground fish meat without thawing and taking out a suitable amount of the crushed material, as necessary. SOLUTION: Crushed fish paste of frozen fish meat is preserved in a frozen state without thawing, a necessary amount of the crushed material is taken out and thawed, and then rubbing with salt, seasoning, shaping and heating are performed in the ordered turn. Concretely, e.g. frozen ground fish meat is cut as it is in the frozen state by a frozen cutter and crushed, preserved in a freezing and preserving tank and the crushed ground fish meat in a frozen state is carried out by each constant amount with a screw pump in the tank, as necessary. The crushed material may be freezing-preserved with each rank or may be freezing-preserved by mixing various ranks at a mixing ratio according to an objective product. The crushed material preferably has a size of 10-3mm because of hardly generating a quality difference between the surface and the inside because of a short thawing time. |
