A process and assembly determine the condition of organic waste matter which has been composted in a force-ventilated closed container. The novelty is that: (a) the organic waste (2) is placed in a vessel which is then evacuated; (b) the pressure difference between the inner vessel (5) and ambient air pressure is measured at intervals or continually; (c) the vessel (1) is evacuated until a given pressure is reached which is signalled by the evaporation of water; (d) the heat energy required to evaporate the water is supplied to the vessel (1); (e) a suitable vessel (1) has an air-tight vacuum seal, incorporates a vacuum pump (4), a vacuum pressure gauge (5) and a heater (6, 7, 8).
