PROTEIN RAW MATERIAL, ITS PRODUCTION AND USE THEREOF

PROBLEM TO BE SOLVED: To obtain a new protein raw material excellent in water-retaining force and oil-retaining force, having good taste and texture and having physical properties capable of keeping these physical properties even in acidic conditions and under freezing treatment. SOLUTION: This protein raw material has >=20 NSSI(nitrogen salt dissolving index) and contains 40-65wt.% soybean protein, 20-50wt.% soybean fiber and <=5wt.% soybean-soluble saccharide in its dried solid content. The method for producing the protein raw material comprises extracting and removing readily elutable protein and soluble saccharides under water system from defatted soybean, and the protein raw material is used as a raw material for foods.
