PROBLEM TO BE SOLVED: To cook a butter rice by a method capable of being simply carried out by anyone without requiring adjustment of the degree of fire by frying raw rice with butter, recovering the fried rice in a package and putting bouillon therein, packing approximately in vacuum and boiling the rice with water. SOLUTION: Onions cut into tiny pieces are fried with butter until the onions become transparent, mixed with raw rice which is washed with water and dehydrated. The mixture is fried until the rice becomes transparent, put together with bouillon in a package and packed approximately in vacuum. The packed onions, rice and bouillon are rapidly quenched by a quick cooling refrigerator until the core temperature reaches 2-3 deg.C. Then the rapidly quenched pack is preserved at 1-2 deg.C so as not to freeze the materials in the pack. The material kept in cold storage are boiled in boiling water and the rice is boiled to give the objective butter rice readily cookable by anyone without requiring adjustment of the degree of fire, useful for pilaf, doria, etc., in a restaurant, etc. |
