PROBLEM TO BE SOLVED: To obtain an acidic milk beverage for sale under heating, containing trehalose and water-soluble polysaccharides, not containing pectin, hardly causing browning or deterioration of taste, excellent in stability of milk protein and suitable for sale by heat-insulating type automatic saling machine. SOLUTION: This acidic milk beverage contains (A) preferably 3-10wt.% trehalose (α-D-glucopyranosyl-α-D-glucopyranoside) and (B) preferably 0.1-0.5wt.% water-soluble polysaccharides derived from soybean, e.g. galactose and arabinose and does not contain pection. |
