PROBLEM TO BE SOLVED: To obtain a glycopeptidase having an optimum pH value close to 7, and to provide a production method for the enzyme by microorganisms. SOLUTION: Bacteria belonging to Sphingobacterium such as Sphingobacterium mOL12-4s are cultured, and from the resultant cultured product, the objective new glycopeptidase having the properties described below is collected: (1) action: hydrolyze the bonds between the asparagine residues and N-acetylglucosamine residues in a glycoprotein or glycopeptide; (2) substrate specificity: acting on a glycoprotein or glycopeptide containing asparagine-linked type sugar chains; (3) optimum reactive pH: close to 7 at 25 deg.C; (4) stable pH range: 5-9 at 25 deg.C; (5) optimum reaction temperature: close to 25 deg.C at pH7.1; and (6) thermal stability: not deactivating for 48h or longer at 25 deg.C. |
