PROBLEM TO BE SOLVED: To readily produce hyaluronic acid useful as cosmetics, medicines, etc., by culturing a microorganism having the ability to produce the hyaluronic acid in a culture medium containing a nonionic surfactant added thereto, producing and accumulating the hyaluronic acid having a specific molecular weight in the culture medium and then collecting the produced hyaluronic acid. SOLUTION: A microorganism having the ability to produce hyaluronic acid such as Streptococcus pyogenes, Streptococcus equisimilis, Streptococcus equi, Streptococcus dysgalactiae or Streptococcus zooepidemicus is cultured in a culture medium containing a nonionic surfactant such as an ether type or an ether ester type added at 0.01-1.0wt.(g)/vol.(dl)% added concentration thereto. The hyaluronic acid having 100000-2000000 molecular weight is produced and accumulated in the culture medium and then collected to thereby readily afford the objective hyaluronic acid useful in the field of cosmetics, medicines, etc. |
