FIELD: molecular biology. SUBSTANCE: invention relates to the two new bacteriocines of Streptococcus thermophilus containing amino acid sequences N 1 and N 2, signal peptides of these two bacteriocines, nucleotide sequences encoding these bacteriocines, especially, to operon encoding the indicated bacteriocines showing the sequence N 3; strains producing at least one of these bacteriocines, especially, to the strain CNCN 1-1351; method of preparing supernatant extract containing at least one of these two bacteriocines and the use of these bacteriocines for production of foodstuffs, in part, cheeses and dairy products, and cosmetic production as an active agent against pathogens. EFFECT: improved method of preparing.
