FIELD: biotechnology, microbiological industry. SUBSTANCE: method of food yeast preparing involves yeast culturing in fermenter on nutrient medium containing carbon and nitrogen sources, required mineral additions and process is carried out for two stages. The first stage is carried out on nutrient medium containing noncarbohydrate raw (carbon source) and the second stage - on medium containing carbohydrates, under aeration condition at every stage followed by biomass separation from cultural fluid where yeast were cultured up to complete utilization of noncarbohydrate substrate and assimilated metabolites; at the second stage yeast were cultured on carbohydrate raw for two steps: at the first step yeast were adapted to carbon raw, and the second step biomass is grown up to the complete utilization of carbohydrate nutrition source and the latter is taken at amount 0.2-1.0% of assimilable reducing substances. Method can be used for preparing nutrient media for production of food and vitamin additions. EFFECT: enhanced quality of biomass, decreased raw consumption. |
