PROBLEM TO BE SOLVED: To obtain a soft fish-paste product having water-holding stabilizing effect and excellent in freeze resistance by waving under specified conditions a dough prepared by homogeneously mixing pasty fish meat with collagen fibrous protein extracted from a kind of animal to effect waving processing of the final product. SOLUTION: A dough prepared by homogeneously mixing 34-70wt.% of pasty ground fish meat with 30-66wt.% of collagen fibrous protein extracted from a kind of animal such as cattle or swine is heated with a heat source such as steam, hot water, gas or electricity to effect contraction of the collagen fibrous protein and fine fibrillation and waving the fish paste as a whole, thus obtaining the objective blanched whale-flavored fish-paste product. |
