FIELD: food industry, chemical industry. SUBSTANCE: screened buckwheat shell is washed by water and extracted with the help of 1-5 weight % solution of sodium carbonate or sodium hydrocarbonate or by mixture of said carbonate with calcium hydroxide. The process is carried out at 60-100 C, hydromodule being 1.7-4.5. Thus prepared solution is concentrated by ultrafiltration, thus obtained concentrate being evaporated.
