<p>An oven (10) for heating food includes a refractory slab (56) for placing a food item to be heated thereon. The refractory slab (56) is preheated to a preselected temperature by a first electric resistance heating element (54) disposed below the slab (56). The oven (10) also includes a second electric resistance heating element (44) and circulating fan (36) disposed above the food to be heated. When food is cooking, electrical power is switched from the first heating element (54) to the second heating element (44) so that both heating elements are never operated at the same time. Food is cooked by the dual action of conduction from the slab (56) and convection from the second heating element (44) and fan (36). After food is cooked, power is switched back to the first heating element (54) to maintain the slab (56) at the preselected temperature.</p> |
