PROBLEM TO BE SOLVED: To produce TOFU (soybean curd) coagulated with bittern of high quality, high water retention, high elasticity, flat and smooth skin in high productivity. SOLUTION: Hot and thick soybean milk 13, for example, of 13% solid content at 62 deg.C is charged in the molding box 12 by 20 liters. A coagulating agent 28 is added to the soybean milk 13 by a prescribed amount and they are stirred with the screw 14 for a certain time, as the number of rotation of the screw is gradually reduced. After the coagulation of the soybean curd 13 is accelerated by the rotation of the screw 14, the screw 14 is immediately stopped and is lifted, as it is rotated, to leave from the stirring zone. Thus, the screw 14 can be removed from the half-coagulated soybean curd without its breakage. Using this device 1, soybean curd coagulated with bittern can be readily produced in high quality, high water retention, high elasticity, flat and smooth skin in no need of the skill. |
