An assembly applies microwave heat treatment to fluid substances and particles esp. food flowing through a pipe (10). The novelty is that: (a) the specialist pipe fitting in which the microwave heating takes place is welded or flanged into a section of the extended pipe; (b) that the microwave pipe wall bears slits (11) through which the microwave resonators (8) discharge their energy; (c) that the slits are arranged in a transposed axial, azimuthal or helical pattern.
