PROBLEM TO BE SOLVED: To obtain the subject noodles having gloss and capable of restoring its excellent flavor by jetting high-temperature and high-speed air and/or inert gas from a jetting nozzle tube to steamed noodles and uniformly and quickly swelling and foaming the surface and inside of noodles. SOLUTION: Steamed noodles are swollen by jetting a high-temperature wind of 100-200 deg.C at a high-speed from plural jetting nozzle tubes provided above and below a carrying net conveyor while transferring steamed noodles on the carrying net conveyor. A temperature of air and/or inert gas is controlled in a high-pressure chamber and supplied into the jetting nozzle tubes. By the process, instant noodles swollen and foamed up to inside into which hot water is readily penetrable when drinking and eating are obtained. |
